
2 Scoops: Northern Colorado Ice Cream Shop Begins Taking Over With 2nd Location
You can find more than a few local ice cream shops in Northern Colorado, but you would be hard-pressed to name any local ice cream shop that has locations in more than one Fort Collins area city. Who knows what the upcoming years hold for this little 'vintage-styled' shop?

The great thing about ice cream, is that you love it as a kid and you love it as an adult. It's great for special occasions, and it's great for just a quick treat, "just because." Maybe it's because it usually comes in a lot of different flavors, so it's easy for everybody to have a fun time. I'm kind of boring: I really like vanilla; I should open my own shop and call it, "Dave's Vanilla." It would be a play on word: I'm plain (vanilla) and I only serve variations of vanilla ice cream.
From Cart to Brick-and-Mortar to Expansion Plans
An ice cream [cart] took the big leap to becoming an actual brick-and-mortar ice cream shop in the spring of 2025, taking over a spot that had long held a Starbucks in Old Town Fort Collins. It had to be exciting for Edison Ice Cream, knowing that they'd be taking over that great corner location at College and Walnut. It would seem the people were excited too, as they've had enough business to expand to Greeley.
Fort Collins Ice Cream Shop Opening Location in Downtown Greeley
A location that was a shoe repair shop in Greeley, Salzman's, will be the home to the second Edison Ice Cream shop. The location is 911 8th Avenue, just south of Patrick's Irish Pub, The Cow and the 9th Street Plaza. This will be a great spot, as it's nearby popular locations; they'll become one of those "popular' spots in no time.
