Colorado Has a Cool, New ‘Underground’ Mexican Spot You Need to Hit Up
When it comes to Colorado restaurants, Mexican restaurants can be very successful. Here comes a new Mexican restaurant in Fort Collins, and it looks great.
They may be using the term "underground" pretty loosely, but they have a great location and what looks to be a lot of fun.
It was in early 2020 that a great bar, Bar Louie, closed down at Foothills in Fort Collins. It was a fun place to stop in before/after a move at the Cinemark or during shopping excursions at Foothills.
With all the changes coming to Foothills in the coming years, it does seem bold that a new Mexican restaurant would take a chance at taking the vacancy that Bar Louie left behind.

WHO'S BEHIND THE AGAVE UNDERGROUND IN FORT COLLINS?
Chef Fausto Felix is a co-owner of Agave Underground. According to YellowScene, Felix moved from Mexico to the U.S. when he was 17; he owns three restaurants in Colorado now.
IS AGAVE UNDERGROUND RELATED TO BLUE AGAVE IN DOWNTOWN FORT COLLINS?
It does not appear so. However, ironically, you must go downstairs, "underground," to get to Blue Agave, while Agave Underground is above ground.

Agave Underground has a very authentic Mexican menu featuring ceviche, rellenos, and traditional Mexican dishes. Their drinks menu is expansive, with tequilas, margaritas, martinis, mezcaritas, and much more.
